Taleggio for cooking
Taleggio is an excellent cooking and eating cheese: it can be used as an ingredient in preparing the main course or as part of a cheese board at the end of the meal. If serving it on a cheese board, it is is well accompanied by some fruit such as grapes, apples or pears. It is particularly versatile in recipes because it liquifies easily and makes an ideal ingredient in pastas, risottos, soups, in omlettes, as a pizza topping or in gratins.
For optimum flavour, serve at room temperature.
It is not necessary to remove the edible rind, just gently scrape it.
